    Sauté aromatics

    In a heavy pot, heat olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes. Add minced garlic and cook 30 seconds until fragrant.

    Brown the beef

    Increase heat to medium-high. Add ground beef and cook, breaking up the meat, until browned all over, about 6-8 minutes. Drain excess fat if desired.

    Bloom spices

    Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook 1-2 minutes to wake up the spices.

    Add liquids

    Pour in tomato sauce and beef broth. Add the bay leaf. Stir to combine and bring to a gentle simmer.

    Simmer chili

    Reduce heat to low and simmer uncovered for 25-30 minutes, stirring occasionally, until thickened and flavorful. Taste and adjust seasoning.

Toasting buns, cooking dogs, and final assembly

    Toast buns (optional)

    Lightly butter the cut sides of the buns and toast in a skillet or on a grill until golden, about 1-2 minutes.

    Cook hot dogs

    In a separate skillet or grill, cook the hot dogs until heated through and lightly charred, about 5-7 minutes.

    Assemble

    Place a hot dog in each toasted bun. Spoon generous chili over the dog, then top with shredded cheddar cheese so it melts slightly.
