Method

Chili

  1. 1

Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.

  2. 2

Add minced garlic and cook 1 minute until fragrant.

  3. 3

Add ground beef and brown, breaking up the meat with a spoon, about 6-8 minutes.

  4. 4

Stir in chili powder, cumin, smoked paprika, oregano, cayenne, and cocoa powder. Cook 1-2 minutes to bloom the spices.

  5. 5

Stir in tomato paste and cook 1 minute.

  6. 6

Pour in craft beer; simmer 2-3 minutes to reduce slightly.

  7. 7

Add crushed tomatoes and beef broth; stir to combine.

  8. 8

Add beans; bring mixture to a boil, then reduce heat to low.

  9. 9

Simmer uncovered about 45-60 minutes, stirring occasionally, until chili thickens and flavors meld.

  10. 10

Season with salt and pepper to taste.

  11. 11

Ladle chili into bowls and top with shredded cheddar cheese and sliced green onions.

  12. 12

Serve with crusty bread or over rice if desired.
