Chicken Schnitzel

    Pound and prep chicken

    Place each chicken breast between two sheets of plastic wrap and gently pound to an even thickness of about 1/4 inch (6 mm). Pat dry with paper towels and season lightly with salt and pepper.

    Set up dredging stations

    Place flour in a shallow dish. Beat eggs in a second dish. In a third dish, stir together breadcrumbs, grated parmesan, paprika, garlic powder, salt and pepper.

    Dredge the chicken

    Dredge each chicken breast in flour, shaking off excess. Dip into beaten eggs, then coat in the breadcrumb mixture, pressing gently to adhere.

    Fry schnitzels

    Heat vegetable oil in a large skillet over medium heat until shimmering (about 350°F/175°C). Fry the breaded chicken in batches 2-3 minutes per side, until golden brown and cooked through. Transfer to a rack or paper towels to drain.

Lemon Aioli

    Make the aioli

    In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, minced garlic, salt and pepper until smooth. Adjust seasoning to taste.

Sandwich Assembly

    Toast the bread

    Lightly toast the four slices of bread in a dry skillet or toaster until golden.

    Assemble and serve

    Spread aioli on one side of each toasted slice. On the bottom slices, layer lettuce, tomato, a schnitzel cutlet, and pickle slices. Top with the second slice, aioli side down. Serve immediately with lemon wedges if desired.
