Cook the chicken
Season chicken breasts with 0.5 teaspoon salt and 0.25 teaspoon pepper. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through, about 5–6 minutes per side. Remove from heat and let rest 5 minutes, then slice.

Prepare kale
While the chicken rests, wash kale, remove tough stems, and chop finely. Place into a large serving bowl.

Make dressing
In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and 1/4 cup grated Parmesan until smooth. Reserve the remaining 1/4 cup Parmesan for garnish. Season with a pinch of black pepper.

Toast croutons
In a skillet, add 1 tablespoon olive oil and toast bread cubes until crisp and golden. Lightly season with a pinch of salt.

Assemble salad
Add sliced chicken to the kale. Pour dressing over and toss to coat. Add croutons and toss gently. Sprinkle the remaining 1/4 cup Parmesan over the top.
