Cheese Fries

Preheat oven to 425°F (220°C).

Rinse potatoes and cut into evenly sized fries.

Optional: Soak cut potatoes in cold water 15-20 minutes to remove excess starch.

Drain and pat potatoes dry thoroughly.

In a large bowl, toss fries with olive oil, salt (fries), black pepper, paprika, and cornstarch until evenly coated.

Spread fries in a single layer on a parchment-lined baking sheet. Bake 25-30 minutes, flipping halfway, until crispy and golden.

Add flour and whisk to form a roux; cook 1-2 minutes.

Slowly whisk in milk until smooth and slightly thickened.

Stir in cheddar cheese and cream cheese; continue whisking until sauce is melted and smooth. Season with salt (sauce) to taste.

Add minced jalapeños to the cheese sauce and simmer 1-2 minutes to meld flavors.

When fries are done, remove from oven and transfer to a serving platter.

Pour cheese sauce over fries or serve sauce on the side.
