    Preheat a skillet or grill to medium-high heat. Lightly toast the sesame brioche bun halves until golden.

    Season the beef patty with 0.25 teaspoon salt and 0.125 teaspoon black pepper. Add 1 teaspoon olive oil to the pan and cook the patty 3-4 minutes per side for medium, flipping once. In the last minute, place Gruyère slices on the patty to melt.

    In a separate skillet, cook Zoe's bacon until crisp. Transfer to a plate lined with paper towels.

    In a small pan, sauté the yellow onions with 1 teaspoon olive oil until translucent, then add 1 tablespoon balsamic glaze and cook until onions are caramelized.

    Fry the egg in a nonstick skillet with a touch of oil until the whites are set and the yolk is cooked to your liking (classic sunny-side up). Season with a pinch of salt.

    Assemble: On the bottom bun, spread 2 tablespoons of mayonnaise and layer the arugula.

    Place the cheese-melted beef patty on top, then the crispy bacon.

    Top with balsamic onions and the fried egg. Cap with the top bun and serve immediately.
