    Make batter for fried avocado

    In a bowl, whisk together flour, cornstarch, baking powder, and pepper. Gradually whisk in ice-cold water until a smooth, thin batter forms.

    Fry the avocado

    Cut avocados into 1/2-inch wedges. Dip each wedge into the batter, letting excess drip off. In a deep skillet, heat neutral oil to 350-375F and fry batter-coated avocado until crisp and golden, about 2-3 minutes. Drain on paper towels.

    Prepare cilantro-lime slaw

    In a large bowl, combine shredded cabbage and red onion. Add chopped cilantro, 2 tablespoons lime juice, olive oil, 1/2 teaspoon salt, and 1/2 teaspoon sugar. Toss to combine; adjust salt to taste if needed.

    Make chipotle mayo

    In a small bowl, whisk together mayonnaise, minced chipotle peppers in adobo sauce, and 1 tablespoon lime juice. Set aside.

    Warm tortillas

    Warm blue corn tortillas in a dry skillet over medium heat 30-60 seconds per side until pliable.

    Assemble tacos

    Place 1-2 fried avocado wedges on each tortilla. Drizzle with chipotle mayo and a dollop of salsa verde. Top with cilantro-lime slaw, cotija cheese, and red onion. Garnish with extra cilantro if desired.

    Serve immediately with lime wedges on the side.
