Fruity Tea
Method
Fruity Tea
- 1
Make the strawberry syrup
Combine the 2 cups sliced strawberries, 0.5 cup granulated sugar, and 0.5 cup water in a small saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer and cook, stirring occasionally, until the strawberries break down and the mixture thickens slightly, about 6–8 minutes. Mash with a fork or potato masher to release more juice while it cooks.
- 2
Strain and cool the syrup
Remove the pan from heat. Place a fine-mesh strainer over a bowl and pour the strawberry mixture through, pressing on solids with the back of a spoon to extract as much liquid as possible. Discard or reserve the pulp for another use. Let the syrup cool to room temperature (about 10 minutes); you should have roughly 1/2–3/4 cup syrup. Reserve about 1/2 cup for the tea and keep any extra to adjust sweetness later.
- 3
Brew the jasmine tea
Bring 4 cups of water to just below boiling (about 175–185°F / 80–85°C) — if you don't have a thermometer, bring to a boil then let sit 1 minute. Add 4 tsp jasmine green tea leaves (or 4 jasmine tea bags) to an infuser or directly to a heatproof pitcher. Pour the hot water over the tea and steep 3–4 minutes for delicate jasmine flavor. Remove the leaves/tea bags promptly to avoid bitterness.

Sweeten and flavor
While the tea is still warm, whisk in 1/2 cup of the cooled strawberry syrup until fully dissolved. Add 1 tablespoon fresh lemon juice and taste; if you prefer sweeter or more pronounced strawberry flavor, stir in up to the remaining syrup a tablespoon at a time.
- 5
Chill
Allow the tea to cool to room temperature (about 10–15 minutes), then refrigerate until cold, about 20–30 minutes. If you need it immediately, pour the tea over a pitcher filled with ice to cool quickly, but note this will dilute slightly — adjust sweetness if necessary.

Notes and adjustments
If you prefer a stronger jasmine note, steep the tea up to 4 minutes but watch for bitterness. For a smoother texture, blend the strawberry syrup before straining. To make a hot version, skip the chilling step and serve immediately in warmed cups, garnished the same way.
