    Heat water

    Bring 480 ml of water to about 80–85°C (just below boiling). Green tea is best brewed with slightly cooler water to avoid bitterness.

    Steep green tea

    Place 2 green tea bags in a heatproof pitcher, pour the hot water over them, and steep for 2–3 minutes. Do not over-steep. If you used sugar for the tea, stir in 1 tbs granulated sugar while the tea is hot so it dissolves completely.

    Cool the tea

    Remove the tea bags and let the brewed tea cool to room temperature (about 10 minutes) or cool faster by placing the pitcher in an ice bath for 5 minutes. Once cooled, refrigerate or set aside while you prepare the strawberry syrup. You should have roughly 2 cups of brewed green tea.

Strawberry Syrup

    Combine and simmer

    In a small saucepan combine 1.5 cups sliced strawberries, 4 tbs granulated sugar, and 60 ml water. Bring to a gentle simmer over medium heat, stirring occasionally so the sugar dissolves and the strawberries begin to break down (about 5–8 minutes).

    Mash and reduce

    Use a fork or potato masher to mash the strawberries to release juices and break up chunks. Continue simmering 1–2 minutes until syrupy and slightly thickened. Remove from heat and stir in 1 tbs fresh lemon juice to brighten the flavor.

    Finish syrup

    For a smooth syrup: let mixture cool slightly, then transfer to a blender or use an immersion blender and puree until smooth. If you prefer a seed-free clear syrup, strain the puree through a fine-mesh sieve into a bowl, pressing solids to extract syrup. Cool the syrup to room temperature (or refrigerate to chill). Reserve about 6–8 tbs of syrup for the two servings (adjust to taste).

Milk & Assembly

    Prepare glasses

    Prepare two serving glasses. Divide 2 cups of ice cubes evenly between the two glasses (about 1 cup ice per glass).

    Add strawberry syrup

    Add about 3–4 tbs strawberry syrup into each glass (adjust to desired sweetness and fruit intensity). If you prefer a stronger strawberry flavor, add up to 5 tbs per glass.

    Combine tea and milk

    In a measuring cup or small pitcher combine the cooled green tea (approximately 2 cups brewed) and 2 cups whole milk. If using sweetened condensed milk for extra creaminess/sweetness, add 1 tbs to each serving (2 tbs total) and stir until fully incorporated.

    Pour and mix

    Pour half of the tea + milk mixture into each glass over the ice and syrup. Stir gently with a long spoon to dissolve the syrup into the tea-milk mixture and create a uniform pink-hued milk tea.

    Taste and adjust

    Taste one glass and adjust sweetness or strawberry intensity as needed — add more strawberry syrup or a splash of sweetened condensed milk if desired.

Optional Toppings

    Cook tapioca pearls (if using)

    Bring ~1 liter of water to a rolling boil in a medium pot. Add 1/2 cup uncooked tapioca pearls and stir immediately so they don't stick. Cook until pearls float and then simmer 6–8 minutes (small pearls) until chewy but not mushy; times vary by brand. Turn off heat, cover, and let sit 5 minutes. Drain pearls and rinse briefly with warm water.

    Sweeten pearls

    Dissolve 2 tbs brown sugar in 1–2 tbs hot water to make a quick syrup, then toss the hot cooked pearls in that syrup to coat and keep them sweet and glossy. Spoon desired amount of pearls into each glass before or after adding the tea (usually 2–3 tbs per glass).

    Top each glass with 2 fresh strawberry slices and 3 mint leaves (or arrange as desired). Serve immediately with a wide boba straw if using pearls.
