    Prepare rice and mushrooms

    If using fresh-cooked rice, spread it on a tray and chill in the fridge for at least 30 minutes (day-old cold rice is ideal). Pat the sliced shiitake mushrooms dry with a paper towel to remove excess moisture.

    Heat wok or large skillet

    Place a wok or large heavy skillet over high heat until very hot (about 2–3 minutes). Add 1 tbs vegetable oil and swirl to coat.

    Sear mushrooms

    Add the sliced shiitake mushrooms in a single layer. Let them sear without moving for 1–2 minutes so they brown, then stir-fry 1–2 more minutes until tender and lightly caramelized. Remove mushrooms to a bowl and set aside.

    Scramble eggs

    Add the remaining 1 tbs vegetable oil to the hot wok. Crack in the eggs, season lightly with a pinch of salt, and scramble quickly until just set but still soft. Break into bite-size pieces and push to the side of the wok or transfer to the bowl with mushrooms.

    Stir-fry vegetables

    Add the thawed peas and carrots and half of the sliced green onions to the wok. Stir-fry 1–2 minutes until warmed through. Return the mushrooms and scrambled eggs to the wok and mix briefly to combine.

    Add rice

    Break up any clumps in the cold rice with your hands or a spatula, then add the rice to the wok. Toss and stir continuously over high heat so rice grains separate and get lightly toasted, about 3–4 minutes. Press and flip portions of rice against the hot surface to remove moisture and develop slight char.

    Finish with oils

    Drizzle the toasted sesame oil over the rice and continue tossing for 20–30 seconds to distribute flavor.

Aromatics & Seasonings

    Sauté aromatics

    Before or after adding rice (at a point when the wok is hot and rice is moving), push rice to the sides of the wok leaving a small clearing. Add a quick splash of oil in the clearing if needed, then add the minced garlic and minced shallot. Stir-fry 20–30 seconds until fragrant (do not let burn).

    Season rice

    Mix the soy sauce and oyster sauce together briefly, then pour over the rice and toss quickly to coat evenly. Sprinkle the white pepper and the salt, tasting and adjusting if needed. Continue to stir-fry 30–60 seconds so flavors meld and excess moisture evaporates.

    Final toss and serve

    Add the remaining green onions, toasted sesame seeds, and chopped cilantro (if using). Toss everything to combine and heat through for 15–20 seconds. Taste and adjust seasoning with a pinch more salt or soy if desired. Transfer to a serving dish and serve immediately.
