Tea Concentrate

Bring water to a boil
Pour 8 cups of water into a medium-large pot and bring to a vigorous boil over high heat.

Add dried herbs and fruit
Remove the pot from heat. Add 1/2 cup dried hibiscus flowers, 1/4 cup dried rose hips, 2 tbs dried rose petals, 1 cup fresh mixed berries and the thinly sliced orange. Stir gently to combine so the dried herbs rehydrate and the fruit begins to release juice.

Steep
Cover the pot and let the mixture steep for 12 minutes off the heat. The liquid will turn a deep ruby color as the hibiscus and berries steep.

Strain and press
Place a fine-mesh sieve lined with cheesecloth (or a fine sieve) over a heatproof pitcher. Pour the steeped mixture through to strain out solids. Use the back of a spoon or a spatula to gently press the solids in the sieve to extract as much liquid and flavor as possible. Discard solids.
Sweetener & Citrus

Sweeten while warm
While the strained tea is still warm (not boiling), stir in 1/2 cup honey (or 1/2 cup simple syrup) until fully dissolved. Tasting as you go: add up to 1-2 tbs more sweetener if you prefer it sweeter.

Brighten with lemon
Stir in 2 tbs fresh lemon juice to balance the tartness of the hibiscus and berries. Taste and adjust: more lemon for tang, more sweetener for balance.

Cool the concentrate
Allow the sweetened concentrate to cool to room temperature (about 20–30 minutes). Once cooled, refrigerate the concentrate for at least 30 minutes until fully chilled. The concentrate can be stored covered in the fridge up to 3 days.
To Serve

Prepare glasses
Fill each serving glass with ice (about 1/3 to 1/2 cup ice per glass depending on size). Add 1–2 fresh berries and a lemon slice to each glass if using.

Dilute and pour
For each glass, combine 1 part chilled concentrate with 1 part cold water or sparkling water (adjust dilution to taste; typical ratio is 1:1). Example: for a 12 oz glass, pour ~6 oz concentrate and ~6 oz sparkling or still water. If you prefer non-fizzy, use cold still water. Stir gently.

Notes and storage
Leftover chilled concentrate keeps in the refrigerator up to 3 days. Keep sparkling water separate and add just before serving to retain fizz. Adjust sweetener and lemon to taste depending on the ripeness of your fruit and desired tartness.
