Inspect & rinse
Spread the dried adzuki beans on a tray and pick out any debris or discolored beans. Place beans in a fine-mesh sieve or bowl and rinse under cold running water until water runs clear.

Soak (two options)
Overnight soak: place rinsed beans in a bowl, cover with the listed 8 cups of water (about 3–4x the beans), cover and soak 6–8 hours or overnight. Quick-soak: place beans and water in a pot, bring to a boil for 3–5 minutes, remove from heat, cover and let sit 1 hour. Drain and rinse after soaking.

Cook beans
Transfer the drained beans to a large pot. Add fresh water to cover by about 2–3 inches (use the remaining portion of the listed water as needed). Add 1/4 tsp baking soda if using (this helps soften skins). Bring to a gentle boil over medium-high heat, then reduce to a low simmer. Skim any foam from the surface occasionally. Partially cover and simmer 60–75 minutes, stirring every 10–15 minutes and adding small amounts of hot water if the pot gets too dry, until beans are very tender and mostly intact but can be mashed easily.

When the beans are tender, stir in 1/4 tsp salt, the granulated sugar and the brown sugar. Stir over low heat until sugars dissolve. Continue simmering gently for 10–15 minutes so the liquid thickens slightly and the sugars infuse the beans.

Adjust texture
For a creamy texture, remove about 1 to 1 1/2 cups of the cooked beans with some cooking liquid and mash them with a fork or potato masher, or puree briefly in a blender/immersion blender and return to the pot. Alternatively, lightly mash about a quarter to half of the beans in the pot—leave the rest whole for texture. Taste and add a little more sugar or a pinch more salt if needed.

Add the creamy base
Lower the heat to gentle. Stir in the coconut milk and heavy cream (if using) and warm through for 3–5 minutes — do not boil vigorously once coconut milk is added to avoid separation. Stir in the vanilla extract. Heat until the mixture is evenly hot and slightly thickened; this will give a smooth, creamy finish.

Portion & garnish
Divide the red bean creamy among 4 serving bowls (about 1 to 1 1/4 cups per person). Top each bowl with toasted sesame seeds and a few roasted chestnuts or sweet potato cubes if using. Drizzle a little sweetened condensed milk on top if you like it sweeter and glossier.

Serve warm or chilled
This dessert is delicious warm, or chilled: cool to room temperature and refrigerate for at least 2 hours for a chilled pudding. If chilled, the mixture will thicken — loosen with a splash of coconut milk before serving if desired.

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop over low heat, adding a tablespoon or two of water or coconut milk if too thick. You can also freeze portions up to 1 month; thaw overnight in the refrigerator and stir well before reheating.
