1. Measure and heat

Measure 500 ml filtered water and bring it to just below boiling — about 90–95°C (194–203°F). Using water slightly below a full rolling boil preserves oolong's delicate flavours.

2. Prepare teapot or infuser

Place 2 tsp loose-leaf oolong in a teapot or an infuser large enough to allow the leaves to expand.

3. Wash and slice

Wash the peach, remove the pit, and cut into 6–8 thin slices. Reserve one thin slice for garnish.

4. Muddle to release aroma

Lightly muddle (press) the remaining peach slices in the bottom of the teapot or a heatproof container with the back of a spoon or a muddler to release juices and aroma. Do not puree — you only want some juice and broken flesh to steep with the tea.

5. Combine with tea and pour water

Add the oolong (in the infuser or loose) on top of the muddled peach in the teapot. Immediately pour the hot water (90–95°C) over the tea and peach so the flavors steep together.

6. Steep

Steep for 3–4 minutes for a bright, balanced cup. If you prefer a stronger peach presence, steep up to 5 minutes but taste at 4 minutes to avoid over-brewing the oolong (which can become bitter).

Sweetener (optional)

7. Strain and sweeten

After steeping, strain the tea into two cups (removing tea leaves and peach solids). Stir in 1 tbsp honey total (adjust to taste) until fully dissolved. Start with 1 tbsp divided between the two cups and add more if desired.

8. Garnish and serve

Float the reserved thin peach slice on one or both cups as garnish. Serve hot immediately. If you prefer iced tea, allow to cool to room temperature, add ice, and serve chilled.
