Heat and steep
Bring 600 ml water to just under a boil (about 80–85°C / 175–185°F). Remove from heat and add 2 jasmine tea bags. Steep for 3–4 minutes for a bright, fragrant brew; avoid oversteeping to prevent bitterness.

Strain and cool
Remove tea bags and gently squeeze them. Transfer the brewed tea to a heatproof container and let cool at room temperature 10–15 minutes, then chill in the refrigerator or an ice bath until cold (about 10 more minutes). You should have ~600 ml cooled jasmine tea.
Passionfruit Syrup (yields ~180 ml)

Make the syrup
Combine 120 ml passionfruit pulp, 0.33 cup granulated sugar, and 60 ml water in a small saucepan. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar. Simmer 2–3 minutes until slightly thickened. Remove from heat and stir in 1 tbs fresh lime juice.

Cool and strain (optional)
Let the syrup cool to room temperature. If you prefer a seed-free syrup, strain through a fine mesh sieve; if you like the texture and visual seeds, keep them. This yields about 180 ml of passionfruit syrup.

Combine and mix (shaken iced milk tea)
In a cocktail shaker (or a large jar with a tight lid), add 300 ml cooled jasmine tea, 90 ml passionfruit syrup, 120 ml milk, and 1 cup ice for each serving. For two servings, repeat or mix in two batches: combine total 600 ml tea, 180 ml syrup, 240 ml milk and 2 cups ice if your shaker is large enough. Shake vigorously 10–15 seconds until well chilled and slightly frothy.

Serve
Fill two tall glasses with ice. Strain the shaken mixture into the glasses, dividing evenly. Spoon 1 tbs passionfruit seeds or pulp on top of each glass for garnish if desired. Stir lightly before drinking.

Cook tapioca pearls
If using tapioca pearls, bring a large pot of water to a rolling boil (use at least 10× the pearls by volume). Add pearls and stir so they don't stick. Boil per package instructions (typically 6–10 minutes) until they float and achieve desired chew. Turn off heat, cover and rest for 10–15 minutes, then drain and rinse with cold water. Sweeten lightly by tossing with 1–2 tbs of passionfruit syrup or simple syrup, then add about 1/2 cup cooked pearls per serving to the bottom of glass before pouring the drink.
