Brew the tea

Bring 4 cups water to a rolling boil. Remove from heat, add 4 black tea bags, cover and steep for 4–6 minutes depending on desired strength (4 minutes for lighter, 6 for stronger).

Remove tea bags, gently squeeze each against the pot rim to extract flavor, then discard. Let the brewed tea cool to room temperature, then refrigerate until chilled (about 15–20 minutes).

Passionfruit Syrup

Make the passionfruit syrup

Combine 1 cup passionfruit pulp, 0.75 cups granulated sugar and 0.5 cups water in a small saucepan over medium heat. Stir constantly until sugar fully dissolves and mixture comes to a gentle simmer (about 3–4 minutes).

Lower heat and simmer 2–3 minutes to slightly reduce and thicken the syrup (it will thicken more as it cools). Remove from heat and stir in 2 tablespoons fresh lemon juice to brighten the flavor.

If you prefer a seedless syrup, strain the hot mixture through a fine-mesh sieve into a bowl, pressing with the back of a spoon to extract as much liquid as possible; discard seeds. Let syrup cool to room temperature, then refrigerate until cold.

Sweetener & Citrus (optional adjustments)

Taste the chilled tea combined with a small measure of syrup (see Serving step below). If it needs additional sweetness or floral depth, stir up to 2 tablespoons honey into the syrup or directly into the tea while slightly warm so it dissolves; adjust to taste.

Prepare lemon slices for serving: reserve 4 slices to garnish glasses. Extra lemon can be added to individual glasses for more acidity.

Garnish & Serve

Assemble each glass

Fill four 12-oz (approx) glasses with ice (about 3/4 cup ice per glass). For each glass add 3/4 cup chilled brewed tea and 3 tablespoons passionfruit syrup. Stir gently to combine.

Optional: Top each glass with 1/2 cup sparkling water if you want a fizzy finish (divide the 2 cups sparkling water among the 4 glasses). Taste and, if desired, add a little extra syrup or a drizzle (~1/2 tsp) of honey to adjust sweetness.

Garnish each glass with a lemon slice and a sprig of fresh mint. Serve immediately.
