    Prep passion fruit pulp

    If using fresh passion fruit, cut the fruits in half and scoop the pulp and seeds into a small bowl. You need about 240 ml (1 cup) of pulp. If you prefer a seed-free tea, press the pulp through a fine-mesh strainer into a second bowl, using the back of a spoon to extract as much juice as possible and discard the solids. Reserve 1–2 tablespoons of whole seeds if you like a textured garnish.

    Make passion-sweetener

    In a small saucepan combine the 240 ml strained or unstrained passion fruit pulp and 2 tbs honey (or simple syrup). Warm gently over low heat for about 2–3 minutes, stirring, just until the honey dissolves and the mixture is fragrant. Remove from heat and stir in 1 tbs fresh lemon juice. Taste and add up to 1 more teaspoon honey if you want it sweeter. Allow to cool slightly while you steep the tea.

    Heat water

    Bring 1000 ml water to a boil, then remove from heat and let it cool for about 60–90 seconds to reach ~80–85°C (175–185°F). This temperature is ideal for jasmine green tea to avoid bitterness.

    Steep jasmine tea

    Place 4 tsp jasmine green tea leaves in a teapot or heatproof pitcher. Pour the hot (slightly cooled) water over the leaves and steep for 2.5–3 minutes. Do not oversteep — remove or strain the leaves promptly to keep the tea delicate and fragrant.

    Combine tea and passion mixture

    Strain the brewed jasmine tea into a clean pitcher. Add the warm passion-fruit-and-honey mixture to the brewed tea and stir thoroughly to combine. Taste and adjust sweetness or lemon if needed (add small increments of honey or lemon to balance).

    Serve hot or iced

    For hot service: pour the combined tea into warmed cups and garnish with half a passion fruit or a spoonful of reserved seeds and a few jasmine blossoms. For iced service: let the tea cool to room temp, then refrigerate until cold (about 30–60 minutes) or pour immediately over a jug of ice (2 cups). Stir again, then serve in glasses over ice, garnished with passion fruit halves or reserved seeds and jasmine blossoms.

    Storage: Refrigerate any leftover tea in a sealed container for up to 48 hours. Stir or shake before serving, as pulp may settle.
