Heat water and steep tea
Bring 600 ml water to a near boil (about 95°C / 203°F). Remove from heat and add 3 tablespoons Assam black tea leaves (or 3 strong black tea bags). Steep for 4–6 minutes for a strong brew, then strain the leaves or remove the tea bags.

Sweeten while hot
While the tea is still hot, add 3 tablespoons granulated sugar and stir until fully dissolved. Taste and adjust sweetness if desired.

Cool and combine
Let the sweetened tea cool for 5–10 minutes (or place in the fridge for faster cooling). In a cocktail shaker or large jar, combine about 300 ml of the brewed tea, 120 ml milk (half of the milk), and 3/4 cup ice; shake or vigorously stir to chill and slightly froth. Divide into two serving glasses and top each with remaining 60 ml milk. Stir gently and serve immediately.

Boil pearls
Bring 500 ml water to a rolling boil in a medium saucepan. Add 100 g tapioca pearls and stir gently to prevent sticking. When pearls rise to the surface, cover, reduce heat to medium-low, and simmer uncovered for 8–12 minutes (check package directions — cooking time varies by brand) until pearls are soft but slightly chewy.

Rest and rinse
Remove the pan from heat, cover, and let the pearls sit for 8 minutes. Drain the pearls in a fine mesh sieve and rinse briefly under warm water to remove excess starch.

Make brown sugar syrup and coat pearls
While pearls are cooking or resting, combine 50 g dark brown sugar with 2–3 tablespoons hot water to dissolve (or melt together in a small pan). Place drained pearls into the syrup and toss so they are well coated. Keep warm until ready to assemble the drinks. Add about 2–3 tablespoons of the syrup-coated pearls to each glass of milk tea when serving.
Smooth Fruity Tea (makes 2 servings)

Steep the tea
Bring 500 ml water to just under boiling, remove from heat and add 2 green tea bags. Steep for 2–3 minutes (do not over-steep or tea will be bitter). Remove tea bags and let the tea cool to room temperature (or chill briefly in the fridge).

Prepare fruit
If using fresh strawberries, hull and roughly chop. Measure 1.5 cups frozen mango chunks (no need to thaw).

Blend the smoothie tea
Into a blender add 300–350 ml of the cooled green tea, 1.5 cups frozen mango, 1 cup strawberries, 3 tablespoons honey, 2 tablespoons fresh lemon juice, and 1.5 cups ice. Blend on high until fully smooth and creamy. Taste and adjust sweetness with an extra teaspoon or tablespoon of honey if needed, or add a splash more tea if too thick.
