Tea Infusion

Heat and steep
Bring 4 cups fresh water to just under a rolling boil (about 190–200°F / 88–93°C). Remove from heat and add 4 green tea bags. Cover and steep for 3 minutes to avoid bitterness.

Remove tea and cool
Remove the tea bags, gently pressing each against the side of the pot to extract liquid, then discard. Let the brewed tea cool at room temperature for about 10 minutes, then place in the refrigerator or an ice bath to chill for another 10–15 minutes until cold. Transfer to a pitcher when chilled.
Mango Puree & Sweetener

Make mango puree
Place 2 cups cubed ripe mango in a blender and process until smooth, about 30–45 seconds. If you prefer a silkier texture, press the puree through a fine mesh strainer into a bowl to remove fibers; otherwise use as-is.

Make simple syrup
Combine 0.25 cup granulated sugar and 0.25 cup water in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves and the mixture is clear (do not boil hard). Remove from heat and let syrup cool to room temperature.

Combine mango and syrup
Whisk the cooled simple syrup into the mango puree until fully combined. Stir in 1 tbs fresh lemon juice to brighten the flavor. Taste the mango mixture and adjust sweetness by adding a little more syrup if desired.

Combine tea and mango
Pour the chilled green tea into the pitcher with the mango-syrup mixture. Start by adding the mango mixture to the tea and stir thoroughly. The recipe proportions should yield a balanced, fruity tea; if the flavor is too strong, dilute with up to 0.5 cup additional chilled water or more tea to taste.

Serve over ice
Fill four tall glasses with ice (about 1/2 cup ice per glass). Divide the mango green tea among the glasses.

Garnish and finish
Garnish each glass with mango slices and 2 mint leaves. Stir gently and serve immediately. Store any leftover tea in the refrigerator for up to 48 hours; stir before serving.
