Tea Base

Heat water
Bring 500 ml water to just under a boil (about 85–90°C). Green tea is best brewed with water slightly cooler than boiling to avoid bitterness.

Brew
Add 2 green tea bags to the hot water and steep for 2–3 minutes for a bright, aromatic base. Do not over-steep.

Remove tea bags and let the brewed tea cool for 5 minutes. To cool faster, pour the tea over a cup of ice or set the tea in a shallow container and place in the fridge for 5–10 minutes until lukewarm/cool.
Mango Puree & Fruit

Prepare mango
Peel and dice the ripe mango. Reserve 1/2 cup of the diced mango for garnish and set aside.

Make puree
Place the remaining diced mango in a blender or food processor with 1 tsp granulated sugar and 1 tbs lemon juice. Puree until very smooth. If the puree is too thick to blend, add 1–2 tbs water (from the brewed tea or plain) to reach a pourable consistency. You should end up with roughly 3/4–1 cup mango puree.
Sweetener (Simple Syrup)

Make simple syrup
Combine 0.25 cups sugar and 60 ml water in a small saucepan. Heat gently, stirring until the sugar fully dissolves. Remove from heat and cool to room temperature. You will use 2 tbs of this syrup in the drink; store any extra in the fridge for up to 1 week.

Combine milk and sweetener
In a measuring cup or small bowl, combine 1 cup whole milk (or your chosen milk) with 2 tbs of the cooled simple syrup. Stir to combine. Taste and adjust sweetness if desired.

Assemble the drinks
Divide 2 cups of the cooled brewed green tea between two tall serving glasses (about 1 cup tea per glass). Add about 3/8–1/2 cup mango puree to each glass total (adjust so the total puree from the single mango is used evenly across the two glasses).

Mix and finish
Stir or use a shaker to vigorously mix the contents for 10–15 seconds so the mango, tea, and milk combine and chill. Taste and add extra simple syrup if you prefer sweeter. Top each glass with the reserved 1/4 cup mango chunks (each glass gets ~1/4 cup).
