Chicken Tenders

Preheat and prepare
Preheat the oven to 200°C (400°F). Line a rimmed baking sheet with parchment paper or lightly grease it. Place a wire rack on the sheet if you have one (helps crisp the tenders).

Cut and season chicken
Trim any fat from the 2 chicken breasts and cut each breast into 3 equal strips (about 6 tenders total). In a bowl, sprinkle the chicken with 0.5 tsp salt, 0.25 tsp black pepper, and 0.5 tsp paprika; toss to coat evenly.

Coat the tenders
Working one at a time, dredge each chicken strip in flour (shake off excess), dip into the egg-milk wash, then press into breadcrumbs to coat evenly. Place each coated tender on the prepared baking sheet (or rack).

Rest
Remove from oven and let the tenders rest 2 minutes before serving so juices redistribute and coating firms up.

Stagger baking for timing
Arrange fries in a single layer on a separate baking sheet (or the same sheet with space between items). To have fries and tenders finish together: put fries in the oven first and bake for 10 minutes, then add the tray with chicken tenders and continue baking both for an additional 18–20 minutes, flipping the fries and turning the tenders once halfway. If you prefer, bake fries for 25–30 minutes total at 200°C (400°F) until golden and crisp.

When golden, remove fries to a plate and taste for seasoning; add a light sprinkle of extra salt if needed.

Place 1 cup baby carrots and 60 ml water in a small saucepan with a tight-fitting lid. Bring to a gentle boil, cover, and reduce heat to a simmer. Steam for 6–8 minutes until carrots are fork-tender.

Prepare apple
Core and slice 1 apple into wedges or bite-sized slices. Arrange on a small plate for easy eating.

Spoon 2 tbsp peanut butter (or sunflower butter) into a small ramekin for the apple slices. Place 4 tbsp ketchup into another small ramekin for dipping fries or tenders.

Assemble the kid's meal
On a child-friendly plate, place 2–3 chicken tenders, a portion of oven fries, a small pile of honey-glazed carrots, apple slices with the peanut butter ramekin, and the ketchup ramekin. Serve milk on the side. Allow hot items to cool slightly so they are safe for a child to eat.
