Tea & Simple Syrup

    Bring water to near boil

    Put 4 cups filtered water in a kettle or saucepan and bring to a rolling boil, then remove from heat so it is just off the boil (about 95°C / 203°F).

    Steep black tea with jasmine

    Add 3 tbsp black tea leaves and 1 tbsp dried jasmine flowers to a heatproof pot or infuser. Pour the just-off-boil water over the leaves and flowers. Steep 3–5 minutes for a robust but not over-bitter brew (3 min for lighter, 5 min for stronger).

    Strain and cool

    Strain the tea through a fine mesh strainer into a heatproof container, discarding the leaves and flowers. Set the brewed tea aside to cool at room temperature or place the container in an ice bath to cool faster.

    Make simple syrup

    Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Heat gently, stirring until sugar is fully dissolved. Bring to a bare simmer for 1 minute, then remove from heat and let cool. This yields roughly 3/4 cup syrup.

    Sweeten the brewed tea

    While the tea is still warm, add about 1/4 cup of the simple syrup to the brewed tea, stir to combine, and taste. Adjust sweetness by adding more syrup (reserve at least 2–4 tbsp of syrup for tapioca pearls if using). Once sweetened to your liking, chill the tea in the fridge or in an ice bath until cold (at least 10 minutes). You should have about 2 cups of sweetened tea for assembly.

    Boil water for pearls

    If using tapioca pearls, bring 4 cups of water to a rolling boil in a medium saucepan.

    Cook pearls

    Add 1/2 cup quick-cook tapioca pearls to the boiling water and stir immediately to prevent sticking. When the pearls rise and float, reduce heat to medium-low and simmer, uncovered, for 6–8 minutes (follow package times if they differ). Stir occasionally to keep them separate and check doneness — pearls should be mostly translucent with a slightly chewy center.

    Rest and rinse

    Turn off heat, cover the pot, and let pearls sit for 3–5 minutes (depending on package recommendations). Drain pearls into a colander and rinse under cold running water to stop cooking and remove excess starch.

    Sweeten pearls

    Transfer the drained pearls to a small bowl and toss with 1–2 tablespoons of the reserved simple syrup from the Tea & Simple Syrup section to keep them from sticking and to sweeten them. Keep warm or at room temperature until assembly.

Milk & Assembly

    Prepare serving glasses

    Divide about 2–3 tablespoons (or 1/4 cup per serving if you prefer more pearls) of the sweetened tapioca pearls between two tall glasses (if not using pearls, skip this). Add about 1 cup of ice to each glass.

    Add tea and milk

    Pour 1 cup of chilled sweetened jasmine black tea into each glass (total 2 cups tea used). Then add 1/2 cup whole milk to each glass (total 2 cups milk). If using evaporated milk or creamer for extra richness, add 1–2 tablespoons per glass or adjust to taste.

    Adjust sweetness and mix

    Taste one glass and, if needed, add a splash (about 1 tbsp) of reserved simple syrup to increase sweetness. Stir thoroughly so tea and milk are well combined and pearls are evenly distributed.

    Serve immediately with a wide straw for the pearls. If preparing ahead, keep tea chilled and pearls at room temperature (cooled pearls will harden in the fridge; reheat briefly in hot water then rinse and toss with syrup before serving).
