    Chill the oil

    Pour the neutral vegetable oil into a tall, narrow container (a clean tall jar or pitcher works well). Place the container in the refrigerator or freezer until the oil is very cold but not frozen — at least 30 minutes in the fridge or 15–30 minutes in a freezer. The oil needs to be near refrigerator temperature (around 4°C) so agar droplets will gel on contact.

    Make the agar mixture

    Combine 8 g agar-agar powder, 1,000 ml water (for agar mixture), and 100 g granulated sugar (for agar mixture) in a medium saucepan. Whisk to dissolve the powder and sugar. Bring the mixture to a full boil over medium heat, whisking frequently. Once boiling, reduce heat and simmer gently for 1–2 minutes while stirring to ensure the agar is fully dissolved (no grains visible). Keep the mixture hot and liquid — if it thickens, briefly rewarm.

    Prepare a dispensing tool

    While the agar mixture is hot, transfer it to a heatproof squeeze bottle, a small ladle, or a large syringe. A narrow-opening bottle or syringe gives better control to form round droplets. Keep the container close to the chilled oil so the agar does not cool too much before dropping.

    Form the crystal pearls

    Working with the chilled oil container on a stable surface, hold the dispensing tool about 5–10 cm above the oil surface and slowly drop the hot agar liquid into the cold oil one small drop at a time. Each drop should form a round bead as it hits the cold oil and then sink. Continue dropping until you have the desired amount — drop size will determine pearl size (small drops ≈ 6–8 mm). Work steadily; do not overcrowd the container so the pearls can set individually.

    Set and collect pearls

    Allow the beads to sit in the cold oil for 30–60 seconds to fully gel. Use a fine, slotted spoon or a mesh strainer to scoop pearls from the oil. Transfer them immediately into a bowl of the provided cold water (500 ml) and gently agitate to remove residual oil. Rinse 2–3 times with fresh cold water until they feel clean and not oily.

    Make simple syrup

    While forming pearls (or beforehand), combine 100 g granulated sugar (for simple syrup) and 100 ml water (for simple syrup) in a small saucepan. Warm gently and stir until the sugar dissolves completely. Remove from heat and let the syrup cool to room temperature. This 1:1 syrup will sweeten and preserve the crystal boba.

    Soak pearls in syrup

    After rinsing, transfer the clean pearls into the cooled simple syrup. Gently stir to ensure all pearls are coated and sitting submerged. Let them soak at least 10–15 minutes to absorb sweetness and to keep them from sticking together. Store pearls in the syrup in the refrigerator if not using immediately (up to 24–48 hours best).

    Serve and finish

    Scoop the crystal boba from the syrup with a slotted spoon as needed and add to drinks (milk teas, fruit teas, lemonades) or desserts. If pearls have stuck together, gently separate them with a fork while still in the syrup. If syrup has thickened in the fridge, thin with a little cold water before serving.

    Notes and troubleshooting

    If droplets fail to form round beads, the oil may not be cold enough; chill longer. If beads are hollow or collapse, the agar concentration may be too low — increase agar by 1–2 g next batch. If pearls retain oil after rinsing, rinse more thoroughly in several changes of cold water. Use food-safe equipment and keep hot agar away from children.
