Method

Tea

  1. 1

    Heat water

Bring 240 ml water to a rolling boil in a kettle or small saucepan. For a robust, malty Assam character, use freshly drawn cold water and bring it fully to boil (100°C / 212°F).

  2. 2

    Preheat cup (optional)

If desired, pour a little boiling water into the serving cup, swirl, then discard. This keeps the tea hot longer.

  3. 3

    Steep tea

Place 2 tsp loose-leaf Assam into an infuser or teapot, or place 1 Assam tea bag into the cup. Pour the boiling water directly over the tea. Steep for 4 minutes for a strong, malty cup (steep 3 minutes for slightly less strength, up to 5 minutes for very strong). Cover the cup or pot while steeping to retain heat and aroma.

  4. 4

    Remove leaves / bag

After the chosen steep time, remove the tea bag and discard, or lift out the infuser / strain the leaves into the cup. Do not leave loose leaves in the cup to avoid over-extraction and bitterness.

To serve (optional)

  1. 5

    Add milk

Add 30 ml whole milk (or amount to taste) to the hot tea. For best texture, warm the milk briefly (10–15 seconds in the microwave or gently on the stovetop) before adding to the tea.

  2. 6

    Sweeten

Stir in 1 tsp sugar if desired; adjust to taste. Taste and add more milk or sugar if you prefer a creamier or sweeter cup.

  3. 7

    Serve immediately while hot.
