    Bring water to a rolling boil

    In a large pot, bring 2 L of water to a vigorous rolling boil over high heat. Use a pot large enough that the pearls can circulate freely.

    Cook the tapioca pearls

    Add the 200 g uncooked tapioca pearls to the boiling water and stir gently for 10–15 seconds to prevent sticking. Let the water return to a boil, then reduce heat to medium-high so the water is at a steady rolling simmer. Cook the pearls, uncovered, stirring occasionally. Typical cooking time for standard pearls is 20–30 minutes until they float and become chewy throughout (adjust if your pearls are 'quick-cook'—follow package guidance).

    Cover and rest

    When the pearls reach the desired chew (al dente to slightly soft), turn off the heat, cover the pot, and let the pearls sit in the hot water for 15–20 minutes to finish cooking and soften evenly.

    Prepare black sugar syrup

    While the pearls are resting, combine 200 g black sugar and 120 ml water in a small saucepan with a pinch of salt. Heat over medium heat, stirring until the sugar fully dissolves. Bring to a gentle simmer and cook 4–7 minutes until the syrup slightly thickens and coats the back of a spoon (it will thicken more as it cools). Remove from heat and keep warm.

    Drain and briefly rinse pearls

    After the resting period, pour the pearls into a fine-mesh strainer to drain. Quickly rinse the pearls under warm running water for a few seconds to remove excess starch, then return them to the empty (still-warm) pot or a mixing bowl. Do not soak in cold water—keep them warm so they absorb the syrup.

    Add oil to prevent sticking

    Toss the drained pearls with 1 tsp neutral oil to lightly coat them and reduce immediate sticking while you combine with syrup.

    Combine pearls with black sugar syrup

    Pour the warm black sugar syrup over the warm, drained pearls (reserve a little syrup if you want the topping less sweet). Gently stir to coat all pearls. Return the saucepan to low heat and simmer together 1–2 minutes, stirring, so the pearls soak up and glaze with the syrup.

    Rest to soak and develop flavor

    Turn off the heat and let the pearls sit in the syrup for at least 10 minutes (up to 30 minutes) so they absorb the black sugar flavor. The pearls will continue to soften slightly and the syrup will thicken around them as they cool.

    Portion and store

    Scoop the glazed black sugar boba into jars or containers. Use roughly 3–4 tablespoons (45–60 g) of boba per drink, or adjust to taste. Keep the topping at room temperature for up to 4 hours or refrigerate in syrup for up to 24 hours (reheat briefly in microwave or warm pot and add a splash of hot water if they firm up).

    Spoon desired amount of warm black sugar boba into glasses, then add milk, milk tea, or other beverage. Swirl a little of the remaining syrup from the container into the drink for extra black sugar flavor and color.
