Method
Preparing the Frites

Cut and Soak Potatoes
Wash and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

Heat Oil
In a large pot, heat vegetable oil to 350°F (175°C).

Fry Potatoes
Drain and pat dry the soaked potatoes. Fry them in batches until golden brown and crispy, about 4-5 minutes per batch.

Drain and Season
Remove the frites from the oil and drain on paper towels. Season with salt and black pepper while still hot.

Add Toppings
While the frites are still hot, toss them with grated Parmesan cheese, fresh herbs, and drizzle with white truffle oil.
Making the Roasted Garlic Aioli

Combine Ingredients
In a small bowl, combine mayonnaise, roasted garlic (mashed), lemon juice, and salt. Mix until smooth.
