Preparing the Marinade

    In a large bowl, combine pineapple juice, adobo sauce, minced garlic, cumin, oregano, salt, black pepper, chili powder, and lime juice. Add the pork shoulder, ensuring it is well coated. Cover and refrigerate for at least 4 hours or overnight.

Cooking the Pork

    Preheat the grill to medium-high heat. Remove the pork from the marinade and grill for about 20-25 minutes per side, or until fully cooked and internal temperature reaches 145°F. Let it rest for 10 minutes before slicing.

    Thinly slice the red onion and soak in vinegar for at least 30 minutes.
