In a large bowl, combine pineapple juice, adobo sauce, minced garlic, cumin, oregano, salt, black pepper, chili powder, and lime juice. Add the pork shoulder, ensuring it is well coated. Cover and refrigerate for at least 4 hours or overnight.

Thinly slice the red onion and soak in vinegar for at least 30 minutes.

In a blender, combine the avocado, sour cream, lime juice, and salt. Blend until smooth and creamy.

Assemble Tacos
Warm the corn tortillas on the grill or in a pan. Layer sliced pork, diced pineapple, pickled onions, avocado lime crema, and chopped cilantro on each tortilla. Serve with tomato salsa on the side.
