Preparing the Mushroom Base

    Rehydrate Porcini Mushrooms

    Place the dried porcini mushrooms in a bowl and cover with hot water. Let them soak for about 20 minutes, then drain and chop.

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add diced shallots and minced garlic, sauté until translucent (about 3-4 minutes).

    Add Fresh Mushrooms

    Stir in the fresh button mushrooms and rehydrated porcini mushrooms. Cook until the mushrooms release their moisture and start to brown (about 5-7 minutes).

    Add Broth and Seasonings

    Pour in the vegetable broth, add salt, black pepper, and thyme. Bring to a boil, then reduce heat to a simmer for 15 minutes.

    Blend the Bisque

    Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.

Preparing Hazelnut Cream

    In a food processor, blend the roasted hazelnuts until they form a smooth paste.

Serving the Bisque
