Preparing the Halibut and Chips

Prepare the Batter
In a bowl, mix flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until smooth.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Halibut
Dip halibut fillets in the batter and carefully place them in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side.

Cook the Fries
While the halibut is frying, cook the frozen French fries according to the package instructions until crispy.
Making the Coleslaw

Combine Ingredients
In a large bowl, combine shredded cabbage and carrots.

Mix Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Toss Together
Pour the dressing over the cabbage mixture and toss to combine. Chill in the refrigerator until serving.
Making the Tartar Sauce

In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, and Dijon mustard. Season with salt and pepper to taste.

Plate the Dish
Serve the fried halibut and fries with a generous portion of coleslaw on the side, tartar sauce for dipping, and lemon wedges for garnish.
