Crêpe Batter

Method

Crêpe Preparation

  1. 1

    Make the Crêpe Batter

In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and add the milk and melted butter. Combine the wet and dry ingredients, mixing until smooth. Let the batter rest for at least 30 minutes.

  2. 2

    Cook the Crêpes

Heat a non-stick skillet over medium heat. Lightly grease with butter. Pour about 1/4 cup of batter into the pan, tilting to spread evenly. Cook until the edges lift and the bottom is lightly browned, about 2-3 minutes. Flip and cook for another 1-2 minutes. Repeat with the remaining batter.

Seafood Filling

  1. 3

    Prepare the Seafood Filling

In a skillet, melt the butter over medium heat. Add garlic and sauté until fragrant. Add shrimp, scallops, and crab meat. Cook until shrimp is pink and scallops are opaque, about 5-7 minutes. Stir in green onions, parsley, and lemon juice. Season with salt and pepper. Remove from heat.

Sauce Preparation

  1. 4

    Make the Sauce

In a saucepan, combine heavy cream and white wine. Bring to a simmer and cook for about 5 minutes. Stir in dijon mustard and season with salt and pepper. Remove from heat.

Assembly

  1. 5

    Assemble the Crêpes

Place a crêpe on a plate, spoon the seafood filling into the center, and fold the crêpe over the filling. Drizzle with the sauce and garnish with additional parsley if desired.
