Prepare the Lamb Patties

    Make the Lamb Mixture

    In a large bowl, combine ground lamb, minced garlic, cumin, coriander, paprika, salt, black pepper, and olive oil. Mix well until all ingredients are evenly incorporated.

    Form the Patties

    Divide the mixture into four equal portions and shape them into patties, about 1/2 inch thick.

Cook the Patties

    Grill the Patties

    Preheat your grill or a skillet over medium-high heat. Cook the lamb patties for about 4-5 minutes on each side, or until they reach your desired level of doneness.

Make the Chimichurri Aioli

    Mix Ingredients

    In a small bowl, whisk together mayonnaise, parsley, minced garlic, red wine vinegar, olive oil, salt, and pepper until smooth.

Assemble the Burgers

    Build the Burgers

    Spread a generous amount of chimichurri aioli on the bottom half of each burger bun. Place the cooked lamb patty on top, followed by crumbled goat cheese, shaved red onions, a handful of arugula, and a dollop of tzatziki. Top with the other half of the bun.
