Make the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from oven and let cool.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in sugar, maple syrup, and vanilla extract, mixing until well combined. Add eggs one at a time, mixing well after each addition. Stir in chopped walnuts. Pour the filling over the cooled crust.

Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly browned. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

In a small bowl, mix together the chopped walnuts and maple syrup. Spread this mixture over the cooled cheesecake.
