Preparation

Make the Gorgonzola Cream
In a bowl, blend the Gorgonzola cheese, cream cheese, and milk until smooth. Set aside.

Make the Herb Ricotta
In another bowl, mix the ricotta cheese with fresh herbs and salt until well combined.

Prepare the Honey Chili Glaze
In a small bowl, mix the honey with chili flakes to taste.
Assembly

Assemble the Flatbreads
Preheat your oven to 400°F (200°C). Place the flatbreads on a baking sheet. Spread the Gorgonzola cream over each flatbread, followed by dollops of herb ricotta.

Add Toppings
Layer the shaved prosciutto, sliced figs, and arugula on top of the flatbreads.

Bake
Bake in the preheated oven for about 10-12 minutes, or until the flatbread is crispy and the cheese is melted.

Finish with Glazes
Remove from the oven and drizzle the honey chili glaze and balsamic reduction over the top before serving.
