Prep & mix base

Whisk eggs

Crack 3 large eggs into a bowl. Add 1 tablespoon milk or water (this loosens the texture), 1 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until mixture is uniform and slightly frothy, about 20–30 seconds.

Prepare chosen fillings: grate or crumble cheeses, dice meats, slice vegetables and chop herbs. Keep quantities small (see ingredients) so the omelette folds easily.

Cook fillings (if using)

If using raw vegetables (onion, bell pepper, mushrooms), heat a nonstick skillet over medium heat and add 1 teaspoon neutral oil or a small pat of butter. Sauté onions and peppers 2–3 minutes until softened, then add mushrooms and cook another 2 minutes until moisture mostly evaporates. Season lightly with a pinch of salt. Remove vegetables to a plate.

If using precooked meats (bacon, sausage, ham), warm them briefly in the skillet for 30–60 seconds to take the chill off and release some flavor, then remove to the plate with vegetables. If using smoked salmon or delicate greens (spinach), you can add them later directly to the egg.

Cook omelette

Set skillet to medium-low heat (slightly below medium). Add 1 tablespoon unsalted butter and let it melt and foam but not brown.

Pour the whisked eggs into the skillet, tilting the pan to spread them evenly. Let eggs set undisturbed for 15–20 seconds until the edges begin to set.

Using a rubber spatula, gently push set edges toward the center while tilting the pan so runny egg flows to the edges. Repeat around the pan for 30–45 seconds until the surface is mostly set but still slightly moist on top.

Scatter your prepared fillings evenly over one half of the omelette: a combination of 2–3 tablespoons meats, about 2–4 tablespoons sautéed vegetables or 1/4 cup spinach, and 2–4 tablespoons cheese (or 2 tablespoons goat cheese). Add delicate herbs like chives now.

Cook 20–30 seconds more to warm the fillings and melt the cheese. If the omelette is still very runny on top, cover the skillet for 30 seconds to trap heat and finish setting without overcooking the underside.

Run the spatula under the filled half and fold the opposite half over the fillings to form a semi-circle. Tilt the skillet and carefully slide the omelette onto a plate, seam side down.

Finish & serve

Garnish with a sprinkle of fresh parsley, remaining herbs, a dollop of sour cream or crème fraîche if desired, and a few drops of hot sauce to taste. Serve immediately with toasted bread or an English muffin.

Notes for customization: Use 2 eggs for a smaller portion, or 4 eggs for a larger appetite. Avoid overfilling — total fillings should be roughly 1/3 the volume of the eggs so the omelette folds cleanly.
