pan-fry potatoes
Heat 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering. Add the par-cooked potatoes in a single layer; allow to cook undisturbed for 3–4 minutes so edges brown. Stir or flip and continue to cook 3–4 more minutes until golden and crisp.

Reduce heat to medium. Push potatoes to one side, add diced onion and bell pepper to the cleared area and sauté 2–3 minutes until softened. Stir in minced garlic, paprika, dried herb, salt, and pepper; cook 30–60 seconds to bloom the spices. Toss everything together and taste for seasoning. Keep warm in the pan on low while finishing other components.
Choice: Bacon or Ham

If choosing bacon: place 3 slices in a cold skillet (cast-iron preferred) and cook over medium heat, turning occasionally, until crisped to your liking, about 8–10 minutes. Transfer to a paper towel-lined plate to drain. Reserve 1 teaspoon of bacon fat to add to potatoes or eggs if desired.

If choosing ham: heat 1/2 teaspoon neutral oil in a skillet over medium-high heat. Add 3 oz ham slices and sear 1½–2 minutes per side until browned and warmed through. Transfer to plate and keep warm.
Eggs & Garnish

Choose your egg style (fried over-easy/over-medium, scrambled, or sunny-side). For fried: heat 1 tablespoon butter in a nonstick skillet over medium-low. Crack eggs into a small bowl then gently slide into pan. Season with 1/8 tsp salt and 1/8 tsp pepper. Cook until whites are set and yolks cooked to preference (about 2–3 minutes for sunny-side or 3–4 minutes then flip for over-easy). For scrambled: whisk eggs with a pinch of salt, melt butter in pan over medium-low, pour eggs and stir slowly until soft curds form, about 2–3 minutes.
