Bring all ingredients to room temperature for 10–15 minutes if possible; this helps even cooking. Crack eggs into small individual bowls if making fried, poached, or sunny-side-up to make handling easier.

Have your desired add-ins measured and ready at the stove (cheese grated, herbs chopped, meats pre-cooked and chopped).

Scrambled Eggs

Whisk

In a bowl, beat 2–4 large eggs with 1–2 tablespoons milk or cream (optional), 1/4 to 1/2 tsp salt, and a pinch of pepper until just combined and slightly frothy.

Heat pan

Warm a nonstick skillet over medium-low heat and add 1 tablespoon butter. Allow butter to melt and foam but not brown.

Cook

Pour eggs into the skillet. Let sit undisturbed for 10–15 seconds until edges set, then gently push cooked edges toward the center with a spatula, tilting the pan to allow uncooked egg to flow to the edges. Continue for 1.5–3 minutes until soft curds form but eggs remain slightly moist. Stir in optional cheese, herbs, or cooked meats in the final 30 seconds. Remove from heat; residual heat will finish cooking.

Adjust seasoning to taste and serve immediately on toast or with desired sides.

Fried Eggs (Sunny-side up, Over-easy, Over-medium, Over-hard)

Heat pan

Heat a nonstick or cast-iron skillet over medium heat and add 1 tablespoon butter and/or 1 teaspoon olive oil. Heat until butter foams and subsides; pan should be hot but not smoking.

Cook sunny-side

Crack an egg into a small bowl, then gently slide it into the pan. Cook 2–3 minutes for set white and runny yolk (sunny-side). For a glossy top, spoon hot butter/oil over the white near the yolk.

Cook over-easy/medium/hard

For over-easy, cook 1–2 minutes until white mostly set, then gently flip with a spatula and cook 15–30 seconds more for runny yolk. For over-medium, flip and cook 45–60 seconds; for over-hard, cook 1.5–2 minutes after flipping until yolk is fully set. Season with salt and pepper and serve.

Poached Eggs

Prepare water

Fill a shallow saucepan with 3–4 cups water and bring to a gentle simmer (small bubbles) over medium heat. Add 1 tablespoon white vinegar to help the egg whites coagulate; do not salt the water (it can cause whites to disperse).

Create whirlpool

Using a spoon, stir the water to create a gentle whirlpool. This helps the egg white wrap neatly around the yolk.

Poach

Crack one egg into a small cup and gently slide it into the center of the whirlpool. Poach for 2.5–3 minutes for a runny yolk, 3.5–4 minutes for a medium yolk. Use a slotted spoon to lift the egg, gently blot on a paper towel, and trim any ragged edges if desired.

Season and serve immediately on toast, English muffin, or with greens.

Omelet (Classic French-style)

Beat eggs

Whisk 2–3 eggs with a pinch of salt and pepper until homogeneous but not overly foamy. Add a teaspoon of water or milk if desired for silkier texture.

Heat a nonstick skillet over medium-low heat and melt 1 tablespoon butter, coating the surface. Pour eggs in and, using a spatula, gently stir while shaking the pan so the uncooked egg flows to the edges. When the top is nearly set but still a touch wet, add filling (cheese, herbs, meats, vegetables) to one half.

Fold & finish

Fold the omelet over the fillings, slide onto a plate seam-side down, and let rest 30 seconds before serving.

Finishing & Serving
