    Cook the Meats

    In a large skillet over medium heat, cook the sausage until browned and cooked through (about 5-7 minutes). Remove and set aside. In the same skillet, add the bacon and cook until crispy (about 5-6 minutes). Remove the bacon and let it drain on paper towels.

    Sauté the Vegetables

    In the same skillet with the drippings from the sausage and bacon, add the diced onion and roasted red peppers. Cook for about 3-4 minutes until the onion becomes translucent.

    Add Hash Browns

    Add the hash browns to the skillet, spreading them evenly. Cook for about 5-7 minutes without stirring to allow them to get crispy. Then, turn and cook for an additional 5-7 minutes.

    Combine Ingredients

    Once the hash browns are golden and crispy, add the cooked sausage and crumbled bacon back into the skillet. Mix everything together.

    Add Cheese

    Sprinkle the shredded American and mozzarella cheese evenly over the top of the skillet mixture. Cover the skillet with a lid and allow the cheese to melt (about 2-3 minutes).

    Cook the Eggs

    In a separate non-stick skillet, heat a small amount of oil or butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks remain runny (about 3-4 minutes). Season with salt and pepper.

    Once the eggs are done, top the cheesy hash brown mixture with the over-easy eggs. Serve with slices of toast on the side.
