Prepare the Peppers
Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers, remove the seeds and membranes, and set aside.
Filling the Peppers

Cook the Sausage Mixture
In a large skillet over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.

Season the Mixture
Stir in Italian seasoning, salt, and black pepper. Remove from heat and let cool slightly.

Add Cheese
Fold in the shredded mozzarella cheese into the sausage mixture until evenly combined.

Stuff the Peppers
Spoon the sausage and cheese mixture into each bell pepper, pressing down gently to pack the filling.
Baking

Prepare the Tomato Sauce
In a small saucepan, combine canned tomato sauce, dried oregano, and olive oil. Heat over low heat until warmed through.

Bake the Peppers
Place the stuffed peppers upright in a baking dish. Pour the warmed tomato sauce over the peppers. Cover the dish with aluminum foil.

Cooking Time
Bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10 minutes or until the peppers are tender and the cheese is bubbly.
