Preparing the Stuffed Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan cheese, diced cappocollo, minced garlic, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Stuff the Chicken

    Carefully slice a pocket into each chicken breast, ensuring not to cut all the way through. Stuff each pocket with the ricotta mixture, pressing gently to ensure the filling is secure.

    Sear the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.

    Bake the Chicken

    Transfer the seared chicken to a baking dish and place it in the preheated oven. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Cooking the Rice

    Sauté the Onion

    In a medium saucepan, melt the butter over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

    Add the long grain white rice to the saucepan and stir for 1-2 minutes to coat in the butter. Add the chicken broth and salt, and bring to a boil.

    Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.

Serving

    Fluff the cooked rice with a fork and spoon it onto plates. Place the stuffed chicken breasts on top of the rice. Optionally, garnish with additional Parmesan cheese or fresh herbs.
