Method

Salmon Preparation

    Preheat the Broiler

    Set your oven's broiler to high and allow it to preheat.

    Prepare the Marinade

    In a small bowl, mix together the sriracha sauce, honey, olive oil, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets on a baking sheet lined with foil. Brush the sriracha marinade generously over the top of each fillet.

    Broil the Salmon

    Broil the salmon for 6-8 minutes, or until cooked through and flaky.

Orzo Spinach and Roasted Peppers Preparation

    Cook the Orzo

    In a medium pot, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes.

    Sauté the Garlic

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Add Spinach and Peppers

    Add the fresh spinach and roasted red bell peppers to the skillet. Stir and cook until the spinach is wilted.

    Combine with Orzo

    Once the orzo is cooked, drain and add it to the skillet. Toss everything together and sprinkle with grated parmesan cheese. Stir until well combined.

Grilled Zucchini Preparation

    Prepare the Zucchini

    Slice the zucchini in half lengthwise. Brush both halves with olive oil, then sprinkle with salt and black pepper.

    Grill the Zucchini

    Preheat a grill pan over medium heat. Place the zucchini cut side down on the grill and cook for 3-4 minutes. Flip and grill for another 3-4 minutes until tender.
