    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips.

    Cook the Sausage

    In a skillet over medium heat, cook the Italian sausage links until browned and fully cooked, about 10-12 minutes, turning occasionally. Remove from skillet and let rest for a few minutes before slicing.

Grilling

    Grill the Vegetables

    In the same skillet, add a bit of olive oil if necessary and sauté the sliced bell peppers and onion over medium heat until softened and slightly caramelized, about 5-7 minutes. Season with salt and pepper to taste.

    Heat the Tomato Sauce

    In a small saucepan, heat the tomato sauce over low heat until warmed through, about 5 minutes.

Assembling the Sandwich

    Slice the Hoagie Rolls

    Cut the hoagie rolls lengthwise, being careful not to cut all the way through.

    Assemble the Sandwiches

    Layer each hoagie roll with sliced sausage, sautéed peppers, and onions. Spoon a generous amount of warmed tomato sauce over the top, and then sprinkle shredded mozzarella cheese.

    Melt the Cheese

    Place the assembled sandwiches on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 2-3 minutes. Keep a close eye to prevent burning.
