Sausage Patty Preparation

    Prepare the Sausage

    In a bowl, mix the Italian sausage with garlic powder, black pepper, and salt until well combined.

    Form Patties

    Shape the mixture into 4 equal-sized patties.

    Cook the Patties

    In a skillet over medium heat, cook the sausage patties for about 5-7 minutes on each side or until they are cooked through and browned.

Breaded Eggplant Preparation

    Slice the Eggplant

    Cut the eggplant into 1/4 inch thick slices and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.

    Bread the Eggplant

    Dredge each slice in flour, dip into beaten eggs, and then coat with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat the olive oil over medium heat. Fry the breaded eggplant slices for about 3-4 minutes per side until golden brown and crispy. Drain on paper towels.

Sauteed Peppers and Onions Preparation

    Chop the Vegetables

    Slice the bell pepper and onion into thin strips.

    In a skillet, heat olive oil over medium heat. Add the sliced bell pepper and onion, season with salt, and sauté for about 5-7 minutes until soft and caramelized.

Sandwich Assembly

    Assemble the Sandwich

    Slice the Tuscan rolls in half. On the bottom half, layer the cooked sausage patty, followed by the crispy eggplant, sautéed peppers and onions, and top with mozzarella cheese.

    Place the assembled sandwiches under a broiler for 2-3 minutes until the cheese is melted and bubbly.

    Remove from the oven, place the top half of the roll on, slice in half if desired, and enjoy your Sausage Eggplant Sandwich!
