Sausage Eggplant Parm Sandwich Recipe

Method

Prepare Sausage Patties

    Mix and Form Patties

    In a large mixing bowl, combine the Italian sausage, Italian seasoning, garlic powder, and black pepper. Mix well until combined. Form the mixture into 4 equal-sized patties.

    Cook Patties

    In a skillet over medium heat, cook the sausage patties for about 5-7 minutes on each side, or until they are browned and cooked through. Remove from skillet and set aside.

Prepare Breaded Eggplant

    Slice Eggplant

    Slice the eggplant into 1/2-inch thick rounds. Sprinkle with salt and let sit for 30 minutes to draw out moisture, then rinse and pat dry.

    Bread Eggplant

    Set up a breading station with three bowls: one with flour, one with beaten egg, and one with a mix of breadcrumbs and Parmesan cheese. Dredge each eggplant slice in flour, dip in egg, then coat with breadcrumb mixture.

    Fry Eggplant

    In a large skillet, heat the olive oil over medium heat. Fry the breaded eggplant slices for 3-4 minutes on each side, until golden brown. Drain on paper towels.

Sauté Peppers and Onions

    Sauté Vegetables

    In the same skillet used for the eggplant, add 2 tablespoons of olive oil. Sauté the sliced bell pepper and onion over medium heat for 5-7 minutes until softened and slightly caramelized.

Assemble Sandwich

    Layer Ingredients

    On each Tuscan roll, layer a sausage patty, a few slices of fried eggplant, sautéed peppers and onions, and a generous pour of tomato sauce. Top with mozzarella cheese.

    Melt Cheese

    Place the assembled sandwiches on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

    Remove from oven and serve hot, garnished with fresh basil if desired.
