Flatbread Preparation

Activate Yeast
In a small bowl, mix warm water (about 110°F or 43°C) and active dry yeast. Let it sit for 5-10 minutes until frothy.

Combine Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

Mix Dough
Add the activated yeast mixture and olive oil to the flour mixture. Stir until a shaggy dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C) during the last 15 minutes of the dough rising.
Cheese Topping Preparation

Prepare Cheese Mixture
In a bowl, combine ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, chopped fresh basil, and black pepper. Mix well to combine.
Assembly and Baking

Shape Flatbread
After the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle or round shape, about 1/4 inch thick.

Add Cheese Topping
Place the rolled-out flatbread on a parchment-lined baking sheet. Spread the cheese mixture evenly over the surface of the flatbread.

Drizzle with Olive Oil
Drizzle olive oil over the cheese topping for added flavor.

Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbly.
