Main Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Prepare the Marinade

In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice. This will be used to marinate the pork loin.

  3. 3

    Marinate the Pork Loin

Rub the marinade all over the pork loin, ensuring it is evenly coated. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Cooking

  1. 4

    Prepare the Vegetables (Optional)

If using root vegetables, chop them into even-sized pieces and place them in a roasting pan. Drizzle with olive oil, salt, and pepper, and toss to coat.

  2. 5

    Roast the Pork Loin

Place the marinated pork loin on a rack in the roasting pan (or directly in the pan if not using vegetables) and roast in the preheated oven for about 1 hour or until the internal temperature reaches 145°F (63°C).

  3. 6

    Add Broth (Optional)

If using, pour the chicken broth into the roasting pan about halfway through the cooking time to keep the vegetables moist and add flavor.

  4. 7

    Rest the Meat

Once cooked, remove the pork loin from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute.

Serving

  1. 8

    Slice and Serve

Slice the pork loin into even pieces and serve with the roasted vegetables if using. Enjoy your delicious roasted pork loin!
