Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs and olive oil. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

    Cook the Spinach

    In a large skillet, heat a small amount of olive oil over medium heat. Add the fresh spinach and sauté until wilted (about 3-4 minutes). Remove from heat and let it cool, then chop finely.

    Mix the Filling

    In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, egg yolk, nutmeg, salt, and black pepper. Mix until smooth and well combined.

Assembly

    Roll Out the Dough

    Divide the rested dough into four equal pieces. Roll out each piece using a pasta machine or a rolling pin to a thin sheet (about 1/16 inch thick).

    Form the Ravioli

    On one sheet of dough, place small mounds (about 1 tablespoon) of the filling, leaving some space in between. Brush the edges of the dough with water. Place another sheet of dough on top and press down to seal, ensuring no air pockets remain. Cut into squares or desired shapes.

Cooking

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface and are tender. Remove with a slotted spoon.

Sauce Preparation

    Make the Sauce

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds). Add cherry tomatoes and cook until they start to burst (about 5-7 minutes). Season with salt and black pepper.

    Finish with Basil

    Stir in fresh basil leaves and cook for an additional minute. Remove from heat.

Serving

    Serve the Ravioli

    Plate the cooked ravioli and top with the tomato sauce. Garnish with extra basil and serve immediately.
