Rinse and Soak
Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch. This will help make the chips crispier.

Heat Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a slice of potato; it should sizzle immediately.

Drain and Dry Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry the slices for about 3-4 minutes or until they are golden brown and crisp. Use a slotted spoon to remove them from the oil.

Drain and Season
Place the fried chips on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder to taste.

Cool and Serve
Allow the chips to cool for a few minutes before serving. Enjoy your homemade potato chips as a snack or side dish!
