Prepare the Pork Cutlet

Prepare the Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

Bread the Pork Cutlets
Dredge each pork cutlet in flour, then dip in beaten eggs, and finally coat with breadcrumbs. Ensure each cutlet is evenly coated.

Cook the Pork Cutlets
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from heat and place on paper towels to drain excess oil.
Prepare the Vegetables and Assemble the Sandwich

Sauté Onions and Peppers
Slice the onion and red bell pepper. In the same skillet used for the pork cutlets, add a little more olive oil if necessary and sauté the onions and peppers over medium heat until softened, about 5-7 minutes.

Slice the Tomato and Lettuce
While the vegetables are cooking, slice the tomato and wash the lettuce leaves.

Assemble the Sandwich
On the bottom half of each Tuscan roll, spread a layer of mayonnaise. Place a pork cutlet on top, followed by sautéed onions and peppers, slices of mozzarella cheese, tomato slices, and lettuce. Drizzle with Italian dressing and top with the other half of the roll.
