Mozzarella Crusted Chicken Recipe

Chicken Preparation

    Prepare the Chicken

    Preheat your oven to 400°F (200°C). Place the boneless chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness, about 1 inch thick.

    Coat the Chicken

    Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, beat the eggs. In the third dish, mix the bread crumbs, mozzarella cheese, Italian seasoning, salt, and black pepper.

    Bread the Chicken

    Dip each chicken breast first in the flour, shaking off the excess. Then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat it with the breadcrumb mixture, pressing down to adhere.

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side or until golden brown and cooked through. Transfer the chicken to a baking dish.

    Bake the Chicken

    Top each piece of chicken with additional mozzarella cheese and bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.

Linguini and Pomodoro Sauce

    Cook the Linguini

    While the chicken is baking, bring a large pot of salted water to a boil. Add the linguini pasta and cook according to package instructions until al dente. Drain and set aside.

    Make the Pomodoro Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Crush the canned tomatoes and add them to the pan along with salt and black pepper. Simmer for about 15-20 minutes, allowing the sauce to thicken.

    Combine Pasta and Sauce

    Stir in fresh basil into the sauce, then add the cooked linguini. Toss to combine and heat through.

    Serve the Dish

    Plate the linguini with pomodoro sauce and top with the mozzarella crusted chicken. Sprinkle with grated Parmesan cheese before serving.
