Roasting the Tomatoes
Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them cut side up on a baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and black pepper. Roast in the preheated oven for 25-30 minutes, or until the tomatoes are soft and slightly caramelized.

Preparing the Mozzarella
While the tomatoes are roasting, slice the fresh mozzarella cheese into rounds about 1/4 inch thick. Set aside.

Preparing the Basil
Rinse the fresh basil leaves under cold water and pat them dry with a paper towel. Set aside.

Combining Ingredients
Once the tomatoes are roasted, remove them from the oven and let them cool slightly. On a serving platter, layer the roasted tomatoes and mozzarella slices. Start with a layer of roasted tomatoes, followed by a layer of mozzarella, and repeat until all ingredients are used.

Finishing Touches
Drizzle the remaining tablespoon of olive oil over the top of the assembled tomatoes and mozzarella. Scatter the fresh basil leaves on top, and season with additional salt and black pepper to taste.

Serve the Margherita immediately as an appetizer or light meal. Enjoy!
