Ravioli Dough

Make the Dough
In a large bowl, mix the flour and salt together. Make a well in the center and add the eggs and olive oil. Using a fork, beat the eggs gently and gradually incorporate the flour until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes, or until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Prepare the Filling
In a mixing bowl, combine ricotta, mozzarella, parmesan, gorgonzola, egg yolk, parsley, salt, and black pepper. Mix until well combined and set aside.

Assemble and Cook Ravioli

Roll Out the Dough
After resting, divide the dough into four pieces. Roll each piece out on a floured surface to about 1/16 inch thickness.

Fill the Ravioli
Using a teaspoon, place small dollops of cheese filling on one sheet of rolled dough, spacing them about 2 inches apart. Lightly brush the edges with water.

Seal the Ravioli
Cover with another sheet of dough and press down around the filling to seal. Cut out individual ravioli with a knife or pasta cutter.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

Serve with Marinara Sauce
Plate the ravioli and top with marinara sauce. Garnish with additional fresh basil if desired. Serve hot.
